Roasted Carrot Hummus

Ingredients:

  • 8 carrots
  • 400 g cooked chickpeas
  • 1/4 cup of tahini
  • 1 clove of garlic
  • Juice of 1.5 lemons
  • 1/2 tsp cumin
  • 1/2 tsp turmeric (optional)
  • 1/2 tsp salt and pepper
  • 1 tsp chili flakes
  • 2 tsp miso
  • 2 tbsp olive oil
  • 2 tsp cold water

    Instructions
  1. Cut the carrots in half and season them with salt, pepper, chili flakes and 1 tbsp of olive oil.
  2. Place them in the airfryer and roast for 20 min to 180°C or 360 F.
  3. Make the hummus by blending the chickpeas, tahini, lemon juice, water, miso, 1 tbsp of olive oil, salt and cumin.
  4. Add the roasted carrots and blend until smooth.
  5. Serve with some more olive oil, nigella seeds or black sesame, and enjoy!
